Low Calorie Bread Recipe

This low calorie bread is particularly popular for those on a diet:

LOW CALORIE BREAD
2 yeast cakes 2 c. whole-wheat flour
3 tbsp. honey 1 c. soy flour
l 3/4 c. water 1 c. rice flour
2 tbsp. bacon fat or oil 2 tsp. salt

Dissolve yeast in water; add 1 tbsp. of the honey. Heat water to blood temperature. Add fat or oil, remaining honey; stir in all flour. Cover and allow to rise in warm place until double its bulk. Add salt and enough more soy flour to make a stiff dough. Knead well for 3-4 minutes. Pour into greased bread pan and let rise again. Bake at 400°, 15 minutes. Reduce heat to 350° and bake 40 min¬utes. Brush with softened butter and turn out on rack to cool.

Well—then you can actually save 10 or 15 minutes each week by baking your own bread! So "it takes too long to bake bread at home" is no excuse. And the results will soon make all store bread tasteless. Here is your "no excuse" recipe:

Breads & Rolls
3 lbs. freshly ground whole- 1 tsp. salt
wheat flour 1 tsp. honey, raw sugar or un
1 qt. warm water, whey or potato water or milk 1 pkg. dry powdered yeast.

Have all ingredients at room temperature. Soften yeast in a little warm water, add honey, sugar or molasses and set aside about 15 minutes, while you eat breakfast or wash the dishes. Mix flour and salt with a wooden spoon. Gradually stir in yeast mixture. Add water or milk until dough is consistency of thick porridge (more moist than the usual bread dough). Spoon dough into 3 greased pans, set in warm place until dough rises nearly to top of pans. This will allow you another 20-30 minutes to do more of those odds and ends about the house. Bake at 375°, 45-60 minutes, until crusty. Turn out on rack to cool.

OAT BREAD
6 c. whole-wheat flour 2 c. water
1/2 c. soy flour 1 1/2 tbsp. salt
2 c. milk 2 yeast cakes
1/4 c. oil 1 c. steel-cut oats
1/2 c. molasses
Have all ingredients at room temperature. Sift flours. Heat milk to lukewarm and add oil. Add molasses, water and salt. Crumble yeast into mixture and stir until dissolved. Add flour and oats; knead 3 minutes. Allow to rise in warm place for 2 hours. Shape, into 3 or 4 loaves, place in greased pans, cover with damp cloth and allow to stand 1 hour. Bake at 375°, 45-60 minutes.
