Kidney Bean Casserole Recipe

Here is a great kidney bean casserole recipe, that will serve eight people:

1 c. whole wheat bread crumbs 2 small cans tomato sauce
1/2 c. milk 1 chopped green pepper, if desired 1 tsp. salt
½ tsp. chili powder 3 No. 2 cans red kidney beans
1 Ib. ground beef ½ Ib. grated sharp Cheddar
5 tbsp. oil cheese
2 c. chopped onion

Combine bread crumbs, milk, salt, chili powder and ground beef. Form into 24 small balls.

Heat oil in skillet and brown meat balls in hot fat. Remove and cook chopped onion in same skillet. Add tomato sauce and chopped green pepper (if desired).

Place red kidney beans in casserole. Pour tomato sauce over beans.

Place grated cheese on beans. Place meat balls around sides. Beans may be drained first if a thicker mixture is desired. Bake at 350°, 45 minutes to 1 hour. (Serves 8).
