Egg Plant Rice Casserole recipe

This is delicious and highly nutritious:

2 tbsp. oil
¼ tsp. pepper
1 ¼ lbs. ground beef
1 tsp. salt
1 large onion, chopped
2 tsp. chili powder
2 cloves garlic, chopped
1 tsp. oregano
½ c. sliced ripe olives
1 sliced eggplant
1 c. beef consommé
3 medium tomatoes, sliced
½ c. cooked wild rice or ½ c.
1 c. grated Cheddar cheese cooked long-grain brown rice
l½ c. sliced fresh mushrooms or 1 large can sliced mushrooms

Mix together all ingredients except eggplant, tomatoes and cheese; cook in frying pan about 5 minutes. Remove. Dip eggplant slices in flour and sauté in frying pan. Arrange layers of meat mixture, eggplant, tomato and cheese in well greased casserole. Bake in 300° oven about 2 hours. Serves 4.
